Ah! Because of the double embedding I thought you had posted part 2 of the interview on the same day! No such luck, I guess.

Watercress is hard to find in my area even when we're not under ice and snow, but I could look into indoor growing options. I do enjoy watercress when I can find it.

Oh wow! Watercress straight up would be so intense!! Some of that peppery green would be great in a smoothie for sure, and I will certainly give that a try when I can find it. I can't wait to watch tomorrow's conclusion! Fascinating!

BTW, I've been following you both on your quests for the last 6 years, Matt and Angela, and I want to thank you from the bottom of my heart for continuing to be so awesomely inspiring!! <3!!

Watercress may be brilliant, but what about the dangers of infection from liver fluke
i.e. http://www.cfs.gov.hk/english/multimedia/multimedia_pub/multimedia_pub_fsf_22_04.html

or regarding diseases suffered by the plant:-

http://gardenofeaden.blogspot.com/2009/04/pests-and-diseases-of-watercress.html

and for human infection in Europe from Watercress

http://www.ncbi.nlm.nih.gov/pubmed/11411948

Watercress may have therapeutic qualities but it is no use if it causes liver fluke infections.

Kind Regards,
